ABOUT ……… Hot Peppers!

Capsaicin is the heat factor in chili peppers and is actually used medically to produce those deep-heating rubs for treating sports injuries and arthritic therapies. 

Red hot peppers can be two to three times hotter than green peppers.  Capsaicin is an oil and will not mix well with water, so if a pepper is too hot, dringing water will only spread the oil over more of your mouth.  Choose dairy products, like cheese or milk, to neutralize the oil and “cool” your mouth.

A good general rule for hot peppers is that the smaller and thinner the pepper, the hotter it will be.  Dried peppers can be up to ten times hotter than the fresh.
